Veggie Taco Chili

• 1 30 oz can petite diced tomatoes
• 1 30 oz can tomato sauce
• 6 15 oz cans of beans (I choose 2 black, 2 pinto, and 2 kidney), drained & rinsed
• 1 15 oz can sweet corn, drained
• 1 10 oz green chilies
• 1 yellow onion diced
• 1/4c and 2 T taco seasoning
• 1T chili powder
• 1T ranch seasoning mix

Grab a large crockpot, add ingredients, and heat for a few hours. Creates about 8 plentiful servings.

Southwestern Salad

• Lettuce (Mixed Greens, Spinach, Romaine – whatever is on hand)
• 1 Frozen bag of Kroger Zesty Corn & Black Bean Blend
• Salsa
• Lime juice

Prepare the veggies in the microwave, per cooking instructions, and drain juice. Fill a bowl with lettuce, top with 1/4 – 1/2 bag of Kroger’s steamable southwestern veggies, salsa, and lime juice (to taste).
